This is an interesting report, well presented. The DNA material found is listed including that of pathogens such as Yersinia pseudotuberculosis,
Yersinia enterocolitica, Aeromonas hydrophila, Clostridium perfringens and Klebsiella pneumoniae.
Ground meat is in itself a risky product from the hygiene point of view since all membranes have been opened and the open surface of the meat has been increased considerably. Just underlines the importance of proper cooking of hamburgers.
